When I found out last year I was allergic to the proteins in milk, I thought I’d never enjoy all the things I used to that contained yogurt, milk, ice cream, and other milk-based products. I have learned so much since I’ve switched to a primarily non-dairy diet (eggs are OK for me). From time to time, I love to share light and healthy recipes with you. Today, I have a delightfully smoothie recipe for you to try. I like this recipe better than smoothies I have had with traditional yogurt. I hope you do too!
This is a perfect summer recipe because strawberries are in season and the stores are filled with bright red, sweet berries. Nothing says summer more than strawberries (well, and watermelon but I have yet to create a successfully watermelon smoothie). Oh, and if you are on a gluten-free diet, this smoothie is also gluten-free and low in calories.
Vegan Strawberries & Cream Smoothie Recipe
- 1 cup strawberries chopped
- 1/2 cup plain yogurt (I prefer coconut milk or almond milk)
- 1 cup unsweetened light coconut milk
- 1 T pure maple syrup
- 1 tsp pure vanilla extract
- 10-12 ice cubes (if using frozen strawberries, you may not need any ice and just a bit more coconut milk)
Blend everything together in a high powered blender and serve immediately.

I am amazed by this post! I just came back from a trip to Madrid with a friend that is vegan AND gluten intolerant. In the beginning it gave me a hard time find restaurants with her, but I really enjoyed the food and heathy way of eating!
